Jazz Fest Recipe – Crawfish Monica

A Jazz Festival Standard. It just isn’t the Fest until you’ve had some Crawfish Monica. Now you can try it at home. For those of you whom crawfish is an oddity, allow me to point out that it is almost uiversally true that if you enjoy either shrimp or lobster you will love crawfish.

Crawfish Monica

1 Lb. Crawfish Tails, Peeled
1 Lb. Pasta
1 Pint Half ‘N Half
1 Stick butter
1 teaspoon Cajun Seasoning
3/4 Cup Green Onions, Chopped

Cook and drain pasta. Melt butter in saucepan. Sauté onions for 2
minutes. Add seasoning, tails, and fat from peeling tails. Sauté 1
minute. Add half and half and cook for 5-10 minutes over medium heat
until it thickens. Add pasta and toss well. Serve immediately.
